  • 1 rack pork spare or baby back ribs
  • 1/2 cup BBQ rub
  • 1/2 cup apple juice
  • 1/4 cup apple cider vinegar

He’s also on the Pro cook team for Big Green Egg and a full-time caterer/event host in Alberta. Teaching in person classes and workshops this fire master has seen and cooked it all on a grill, in a smoker or over a live fire!

Preparation

Step 1
**Prep**: Pat ribs dry with paper towels. Trim excess fat and remove the membrane from the bone side. Trim flaps and boneless side meat (reserve for soup). Cut between bones for individual ribs. Coat evenly with BBQ rub.

Step 2
**Preheat Grill**: Heat BBQ to 325°F, setting up for indirect heat (coals or burners on one side, ribs on the other). Clean and oil grates.

Step 3
**Cook**: Place ribs on the indirect heat side, bone-side down. Close lid and cook for ~2 hours, spritzing with a mix of apple juice and apple cider vinegar every 20 minutes.

Step 4
**Check Doneness**: Cook until internal temperature reaches 175°F (use a meat thermometer).

Step 5
  **Rest**: Remove ribs from grill, wrap in foil, and let rest for 5-10 minutes.

Step 6
**Serve**: Serve hot with your favorite BBQ sauce on the side.

Tips:

  • Maintain consistent grill temperature; adjust vents or burners as needed.
  • Pair with an ice-cold Miller Lite and sides like coleslaw or cornbread.
